Course Description

Learn to make traditional, authentic Mexican food alongside Mexican native, Chef Ana Perez. Seasonal flavors inspire these holiday recipes! Prepare a formal dinner menu that includes three courses and a Mexican cinnamon-chocolate dessert. See and taste the distinctive flavors, variety of spices and ingredients, and colorful decoration of Mexican cuisine. Bring a little piece of Mexico home to your family! Wear a white chef jacket, dark pants and comfortable, closed-toe shoes. Bring a tool kit with the following: a paring and chef's knife; peeler; and measuring spoons. Prerequisite: CES 2187 Cooking 101 Skill Development or with instructor's approval.
